Western Odisha (India) Authentic Khata / Sour Soup
Input Ingredients:
Main ingredients: Vegetables: Arum, Pumpkin, ladies finger, brinjal, tomatoes,
Seasoning: Garlic, Mustard, cumin seeds, chilly, turmeric, curry leaves
Special ingredient: Karli (made of baby bamboo shoot– local Orissa delicacy), badi (made of black gram)
Preparation time: 15 mins
Cooking time: 20 mins
Process:
1. Chop all the vegetables into medium size cubes except tomatoes.
2. Chop the garlic, chilies. Make a paste of garlic, chilies, mustard, turmeric. This is called besar
3. Heat a pan.
4. Put a tablespoon of cooking oil on heated pan.
5. Half fry all the cut vegetables.
6. Add the besar and add water. Add tomatoes (without cut). Add salt as per taste. Give it a good stern.
7. Let it boil for nearly 7 to 8 minutes.
8. Remove the tomatoes.
9. Make a paste of curd and besan (gram flour). Add the paste. Wait for a minute or two.
10. Keep aside the soup.
11. This is the time for seasoning, tadka. In another cauldron, heat a tablespoon of oil.
12. Add mustard, jira, curry leaves, karli (bamboo shoot), badi. Give it a stern and wait for a minute.
13. Smash the boiled tomatoes and put in the cauldron.
14. Cover it and cook for 3 to 4 minutes in medium heat. Occasionally, give it a good stern. Make sure, the tomato is cooked well.
15. Add the soup once the tomato is cooked well.
16. Enjoy it hot as soup or as curry with rice.
